This cookbook contains more than 300 barbecue recipes, tips and tricks, and interspersed among the recipes are pages describing the best barbecue restaurants in the Appalachians. I must tell you, reading the cookbook made me so hungry I could hardly stand it. I love trying new recipes. The book begins with the true meaning of barbecue, a definition of grilling and smoking and indirect cooking as well as pit cooking, using a fryer, broiling and searing. The author has a real down-home way of explaining things, and even relates the history of barbecue. Along with the recipes there are plenty of tips from food safety to kinds of wood and how to store it. The recipes are divided into Sauces, Marinades and Rubs; Beef; Pork; Chicken and Other Birds; Wild Game; Catfish, Crawfish and More; Dips and Salsas; Breads; Sides and Such; Desert. If you love to cook barbecue, eat barbecue, or just enjoy reading a fun cookbook, this one is for you .Highly recommended.
